Savory Rice Pilaf

  1. In a large saucepan, combine the rice and oil.
  2. Stir over medium heat until the rice is golden brown, about 5 minutes.
  3. Add the stock, apple juice, onions, garlic, lemon juice and thyme.
  4. Bring to a boil.
  5. Reduce heat to low, cover the pan, and simmer until all the liquid has been absorbed and the rice is tender, about 20 minutes.
  6. Fluff with a fork before serving.
