Portugese Kale Soup Recipe

  1. Note: Chourica comes 2 sausages to a package; you can freeze the second one.
  2. Chop kale into bite-sized chunks.
  3. Peel casing off sausage and crumble.
  4. Place kale, sausage, water and potatoes in an 8 qt soup pot.
  5. Bring to boil and then simmer till kale and potatoes are tender.
  6. Takes about 20-30 min.
  7. Add in the beans, including the liquid in the can when the soup is done.
  8. Salt to taste.
  9. This recipe may be halved.
  10. Kale soup freezes very well.
