Black Beans
- 1 lb. dry Black Beans
- 2 tbl. Bacon Grease
- 1 Onion, chopped
- 2 slices Bacon, minced (optional).
- 6 cups Water
- 4 Beef Bullion cubes
- 1/2 tsp. Garlic powder
- 1/2 tsp. Black Pepper
- 1/4 tsp. Cayenne Pepper
- 1 tbl. Sugar
- Place dry beans in large bowl, add Boiling water to cover.
- Let stand about 1/2 hr.
- Drain, rinse, drain again.
- Add bacon grease to large pot on med.
- heat.
- Add onion and saute for 2 mins.
- Add drained beans and saute for 5 mins.
- more.
- Add rest of ingredients, including 6 cups water.
- Bring to boil on high heat.
- Cover, reduce heat to simmer and cook about 90 mins.
- until done to taste.
- Serve with white rice and/or sweet onions.
