Grilled Slamon Fillet With Summer Vegetable Relish

  1. In a bowl, combine vegetables, dill, vinegar, 3 tbs olive oil, and salt and pepper to taste; let rest for 30 minutes.
  2. Meanwhile, season salmon with salt and pepper to taste.
  3. Brish with remaining olive oil and grill over medium high heat for about 5-7 minutes on each side.
  4. When the fish is done, place it on plates and garnish with the relish.
