Black Eyed Bean / Black-Eyed Peas Croquettes

  1. Drain beans / peas and mash them.
  2. Mix with all the other ingredients and season to taste.
  3. The mixture should be quite moist.
  4. Chill for between 1 and 2 hours until firm.
  5. Shape into 8 croquettes.
  6. Dip into beaten egg then into the seasoned flour.
  7. Shallow fry for 4 - 5 minutes on each side.
