Zucchini Pie
- 1 pkg. crescent rolls
- 1 stick oleo
- 1/2 c. chopped onion
- 4 c. thinly sliced zucchini, peeled and cored
- salt and pepper
- 2 eggs
- 2 c. Mozzarella cheese
- 2 Tbsp. parsley flakes
- 1/4 tsp. garlic powder
- 1/4 tsp. oregano
- 1/4 tsp. sweet basil
- 2 Tbsp. mustard
- Place 8 crescent rolls in pie plate, forming a crust.
- Spread 2 tablespoons mustard on crust.
- Melt oleo in skillet.
- Add onion, zucchini, salt and pepper (to taste).
- Cook 10 minutes.
- Beat 2 eggs in bowl and add 2 cups of cheese.
- Stir together zucchini, eggs and cheese with seasonings.
- Place in pie shell and bake 10 minutes at 375u0b0.
- Cover with foil and bake 10 minutes more until set.
- Let stand a few minutes before slicing.
