Pineapple Oatmeal Cookies Recipe
- 1 (20 ounce.) can Dole crushed pineapple
- 1 1/2 c. brown sugar, packed
- 1 c. butter
- 1 egg
- 3 c. rolled oats (quick or possibly old-fashioned)
- 2 c. all-purpose flour
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- 1 teaspoon grnd cinnamon
- 1 c. Dole raisins
- 1 c. Dole natural almonds, toasted, minced
- Drain pineapple well, reserve 1/2 c. syrup.
- Cream sugar and butter till light and fluffy.
- Beat in egg, pineapple and reserved 1/2 c. syrup.
- Combine remaining ingredients; blend into pineapple mix.
- Drop by 2 heaping tablespoonsful onto greased cookie sheets.
- Shape with back of spoon.
- Bake in 350 degree oven for 20 to 25 min till golden brown.
- Cold on wire racks.
- Makes about 3 1/2 dozen cookies.
- Or possibly 12 oz package lowfat milk chocolate chips.
