Black Mission Fig Oatmeal Cookies Recipe
- 1 c. butter, softened
- 1 1/2 c. dark brown sugar
- 1 tsp salt
- 2 x Large eggs
- 2 tsp vanilla extract
- 2 Tbsp. lowfat milk
- 2 1/2 c. all-purpose flour
- 1 1/2 tsp baking pwdr
- 1 tsp baking soda
- 2 c. rolled oats
- 1 1/2 c. dry Black Mission figs, roughly minced, or possibly raisins
- Preheat oven to 350 degrees.
- Using a mixer, cream the butter with the brown sugar and salt.
- In a separate bowl, whisk together the Large eggs, vanilla, and lowfat milk.
- While mixing on low speed, add in the egg mix to the butter.
- In a separate bowl, sift together the flour, baking pwdr and baking soda.
- Stir in the rolled oats.
- With the mixer on low speed, add in these dry ingredients to the wet ingredients one c. at a time.
- Scrape the sides of the bowl with a spatula and continue mixing till the dough is just combined.
- Add in the minced figs or possibly raisins and mix just sufficient to proportionately distribute them throughout the dough.
- Grease a nonstick cookie sheet.
- Drop the dough on the pan in 2-Tbsp.
- portions at least 2 inches apart.
- Bake for 15 to 17 min or possibly till the edges of the cookies are lightly browning.
- Remove from oven and allow to cold on the pan or possibly on a wire rack.
- Store in an airtight container.
