Enchilada Casserole
- 1 lb chicken or ground beef
- 1/2 onion
- 1 can refried beans
- 1 can diced tomatoes
- 1 can diced green chilis
- 1 can red enchilada sauce
- 1 can green enchilada sauce
- 1 packages corn tortillas
- 2 cup shredded cheddar cheese
- Preheat oven to 375
- Cook hamburger or chicken.
- Set aside.
- Combine all ingredients (except for tortillas and cheese) in a large bowl
- Cut tortillas into 1 inch squares
- Place half of the tortillas in the bottom of a casserole dish.
- Pour half of the sauce mixture over the tortillas.
- Repeat layering with tortillas and sauce
- Top with cheese
- Cover with tin foil and cook for 45 minutes
