Blueberry Buttermilk Cake Recipe

  2. Preheat oven to 350 F.

  4. Combine first 5 ingredients in a large bowl; cut in 1/2 c. margarine with a pastry blender or possibly 2 knives till mix resembles coarse meal.
  5. Place 1 c. flour mix in a small bowl; cut in 2 Tbsp.
  6. margarine to create a streusel; set aside.

  8. Add in baking pwdr and baking soda to remaining flour mix in large bowl; stir well.
  9. Combine buttermilk, egg substitute, apple butter, vanilla, and lemon rind.
  10. Pour buttermilk mix over flour mix; beat at low speed of a mixer till well-blended.
  11. 4.
  12. Pour batter into a 13 x 9 inch baking pan coated with cooking spray.
  13. Top batter with blueberries, and sprinkle with reserved streusel.
  14. Bake at 350 F for 50 min or possibly till a wooden pick inserted in center of cake comes out clean.
  15. Let cake cold in pan on a wire rack.
  16. Yield: 16 servings.
  17. NOTES : Here is another "1" which I made!
