Cashew-Banana Millennium Muffins

  1. Preheat the oven to 400 degrees and grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the flour, wheat germ, baking powder and salt.
  3. In another large bowl beat together the eggs, oil, honey, milk and banana.
  4. Stir the dry ingredients into the wet ingredients, stirring until they are just mixed.
  5. Fold in the cashews.
  6. Fill the muffin cups 3/4 full with batter and bake until the muffins are lightly browned and a toothpick inserted in the center of a muffin comes out clean, about 15 minutes.
  7. Serve with scrambled eggs.
