Crunchy Berry Banana Granola
- 4 cups uncooked rolled oats
- 12 cup wheat germ
- 12 cup raw sunflower seeds
- 1 cup chopped raw almonds
- 1 cup raw pistachio nut
- 2 teaspoons cinnamon
- 1 cup honey
- 1 cup molasses
- 1 cup maple syrup
- 1 cup canola oil
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 3 cups sweetened dried banana pieces
- 2 cups raisins
- 2 cups dried cranberries
- Preheat oven to 350.
- Lightly coat two rimmed baking sheets with cooking spray.
- In a large bowl, combine oats, wheat germ, sunflower seeds, almonds, pistachio nuts, and cinnamon.
- Toss well to mix.
- In a small bowl or 2-cup glass measuring cup, whisk together the honey, molasses, maple syrup, canola oil, and vanilla and almond extracts.
- Add to dry ingredients and mix well until thoroughly combined and everything is evenly coated.
- Evenly spread half of the granola on each baking sheet.
- Bake for 35 to 45 minutes, until toasted and fragrant, lightly stirring the granola every 15 minutes.
- Remove the granola from the oven and let stand until completely cool.
- Transfer contents of both baking sheets of granola to a large bowl.
- Add the banana chips, raisins, and cranberries and mix well.
- Store in an airtight container.
