Tuscany Slow Cooked Country Pork Ribs
- 2 Tablespoons Olive Oil
- 8 whole Country Pork Ribs
- 1 whole Large Onion, Sliced
- 1 whole Bell Pepper, Any Color, Sliced
- 1 Tablespoon Black Pepper
- 1- 1/2 cup Low Sodium Vegetable Stock
- 2 whole Bay Leaves
- 2 Tablespoons Tomato Paste
- 1 cup Tomato Or Marinara Sauce
- Grated Parmesan Cheese, For Garnish (optional)
- In a large skillet over medium heat, add olive oil.
- Sear ribs in batches then place inside slow cooker.
- Add onions and bell pepper slices to the skillet, saute a few minutes, and add them to the slow cooker.
- Add black pepper, stock, bay leaves, tomato paste, and marinara sauce.
- Gently stir to mix ingredients.
- Place lid on slow cooker, set to medium heat and cook 4 hours.
- These ribs will be extra tender, juicy and flavorful.
- Add Parmesan cheese, if desired, when serving.
- (Remember to remove bay leaves before serving).
- Serving suggestions: Serve over rice, pasta, or mashed potatoes and be sure to have some crusty bread slices to soak up these juices!
