Peppermint-Chocolate Trifle

  1. Reserve 1/2 cup COOL WHIP.
  2. Beat cream cheese, sugar, 3 Tbsp.
  3. milk, extract and food coloring in medium bowl with mixer until blended.
  4. Gently stir in remaining COOL WHIP.
  5. Beat pudding mixes and remaining milk in medium bowl with whisk 2 min.
  6. Stir in melted chocolate.
  7. Layer half each of the cookie crumbs, pudding mixture and cream cheese mixture in clear glass bowl; repeat layers.
  8. Top with reserved COOL WHIP and crushed mints.
