Chicken And Sausage Jamabalaya Recipe
- 2 1/2 pound chicken, cut up
- 4 tbsp. beef fry drippings
- 4 stalks celery, chopped
- 1 (8 ounce.) can tomato sauce
- 1 (10 1/2 ounce.) can condensed Kosher chicken soup, undiluted
- 1 3/4 c. water
- 1 1/2 pound cubed Kosher warm sausages
- 1 lg. onion, minced
- 1 bell pepper, minced
- 2 cloves garlic
- 2 c. raw, long grain white rice
- 1 c. Kosher smoked sausage, cut up
- 4 shallots, minced
- 1/4 c. minced parsley
- 1/2 teaspoon cayenne pepper
- Salt & pepper to taste
- Brown chicken pcs in drippings.
- Remove chicken and saute/fry onion, bell pepper, celery and garlic in drippings.
- Add in tomato sauce, soup, water and smoked sausages.
- Cover and let simmer for about 30 min.
- Bring mix to boil and add in rice, chicken, warm sausage, shallots, parsley, cayenne, salt and pepper.
- Cover and cook over low heat for 30-45 min or possibly till chicken is tender and rice is done.
- Serves 6.
