Roasted Plantain

  1. Preheat oven to 400F.
  2. Peel and cut the plantains in half lengthwise and crosswise so you get 4 pieces from 1 plantain.
  3. Arrange on a baking tray and season with salt, spray with PAM and roast for 40 minutes until golden brown.
  4. Great as a side with chicken, spicy beans or spinach.
  5. Anything really!
