Robin's Easy Potato Soup

  1. Wash, peel, and dice potatoes.
  2. Place in a large pot of water and boil until soft.
  3. Strain potatoes and place back into large pot.
  4. In a medium sized pot, heat milk, but do not boil.
  5. Once heated, pour over potatoes.
  6. Smash potatoes a bit.
  7. In medium pot, melt butter and stir in chopped onion.
  8. Cook onion until softened.
  9. Add frozen vegetables (or fresh if preferred) and cook until thawed (soft).
  10. Add butter/vegetables combination to the potatoes/milk combination.
  11. Add the flour to thicken and salt/pepper to taste.
  12. Stir and heat for approximately 15 minutes.
