3-In-1 Muffins
- 12 cup all-purpose flour
- 12 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon baking soda
- 14 teaspoon salt
- 4 egg whites
- 23 cup sugar
- 14 cup oil
- 12 teaspoon vanilla
- 1 12 cups any combination of shredded carrots (use all carrots or all zucchini or half of each) or 1 12 cups shredded zucchini (use all carrots or all zucchini or half of each)
- 12 cup raisins (optional)
- Sift together flours, baking powder, cinnamon, baking soda and salt.
- In a large bowl whisk together egg whites, sugar, oil, and vanilla.
- Mix in dry ingredients until combined.
- Stir in zucchini and raisins spoon mix into prepared muffin cups.
- Bake at 375F for 20 minutes or until toothpick comes out clean.
- Makes 1 dozen.
