Smoked Jalapeno Poppers with Bacon, Apple and Brie

  1. Note if you want to smoke this you will also need wood for the smoker as well as a disposable aluminum foil pan (big enough to fit all of the peppers into).
  2. I use fruit wood (apple, cherry, etc).
  3. Wash and dry jalapenos, cut them in half lengthwise and scoop out the seeds and vein from the inside with a spoon or butter knife.
  4. Take small slices of the Brie cheese and mold it into the pepper halves, then wrap one bacon piece around each pepper.
  5. Set aside.
  6. Prepare a smoker, using fruit wood (apple, cherry, etc) and get temperature up to 225 F. Place prepared poppers in an aluminum foil pan and place on the smoker grill rack.
  7. Smoke poppers for 2 hours.
  8. Place apple slices on a serving platter and place one smoked jalapeno popper on top of each apple slice.
  9. Enjoy!
