Smoked Jalapeno Poppers with Bacon, Apple and Brie
- 14 whole Fresh Jalapenos
- 8 ounces, weight Brie Cheese
- 10 strips Bacon, Cut Into Thirds
- 1/2 Fresh Granny Smith Apple, Cored And Cut Into 18 Inch Thin Slices
- Note if you want to smoke this you will also need wood for the smoker as well as a disposable aluminum foil pan (big enough to fit all of the peppers into).
- I use fruit wood (apple, cherry, etc).
- Wash and dry jalapenos, cut them in half lengthwise and scoop out the seeds and vein from the inside with a spoon or butter knife.
- Take small slices of the Brie cheese and mold it into the pepper halves, then wrap one bacon piece around each pepper.
- Set aside.
- Prepare a smoker, using fruit wood (apple, cherry, etc) and get temperature up to 225 F. Place prepared poppers in an aluminum foil pan and place on the smoker grill rack.
- Smoke poppers for 2 hours.
- Place apple slices on a serving platter and place one smoked jalapeno popper on top of each apple slice.
