Ham Potato Bake Recipe
- 4 c. sliced cooked potatoes (4-6 potatoes)
- 2 med. carrots (shredded)
- 1 1/2 c. cubed cooked ham (or possibly Spam)
- 1 (10 3/4 ounce.) can condensed cream of mushroom soup
- 1/2 c. shredded sharp American cheese
- 1/4 c. lowfat milk
- 1 tbsp. instant chopped onion
- 1/8 teaspoon pepper
- Cook potatoes.
- Layer 1/2 the potatoes and 1/2 the carrots in a 2 qt casserole.
- Stir together cubed ham, mushroom soup, 1/2 c. shredded cheese, lowfat milk, instant chopped onion and pepper.
- Pour 1/2 the ham mix over potatoes and carrots in casserole.
- Repeat layers.
- Combine soft bread crumbs, 1/2 c. shredded cheese and melted butter.
- Sprinkle over casserole.
- Bake uncovered at 350 degrees till heated through, about 45 min.
- 4-6 servings.
