Chunky Chicken Chili
- 1 pound chicken breasts cut into bite-sized pieces
- 1 cup onions chopped
- 1/2 cup celery sliced
- 1/2 cup carrots sliced
- 2 each garlic cloves minced
- 1 cup salsa fresh, tomato
- 1 can tomatoes 28 oz
- 28 ounces water canned
- 3 teaspoons chili powder
- 1/2 teaspoon cumin
- 13 bag chickpeas (garbanzo beans) soaked
- 1 each green bell peppers chopped
- 4 each chicken bouillon cubes OR
- 2 cans chicken broth
- 1 x salt and black pepper to taste
- Brown chicken, onions, garlic.
- Add all tomatoes, water, and beans and simmer 30 min.
- Add all other ingredients and simmer until beans and vegetables are tender.
