Aloo Hin (Potato Curry)

  1. Place onion, garlic and ginger in food processor with about 1/4 cup water, and puree.
  2. Add turmeric and chili.
  3. Heat vegetable oil in skillet over medium heat, and saute onion paste, adding enough water to prevent burning.
  4. Cook until onion paste darkens.
  5. Add sesame oil, 1 cup water and potatoes.
  6. Reduce heat to medium-low, and cook until potatoes are soft.
  7. Add water if mixture begins to stick, and season with salt.
  8. Remove from heat, garnish with cilantro and serve.
