Mae's Pickled Beets Recipe
- 2 (16 ounce.) cans sliced beets, liquid removed
- 1 3/4 c. sugar
- 3/4 c. vinegar
- 1 c. beet juice
- 1 teaspoon pickling spice (optional)
- Mix sugar, vinegar and juice from beets.
- Stir till well blended.
- Heat to boiling point but don't boil.
- Turn off heat and add in beets.
- If spice is used, tie in a small piece of cheesecloth or possibly other very thin cloth and add in to warm ingredients.
- After beets have cooled, chill till ready to use.
- Remove spice bag after a few hrs so which beets won't darken.
