Saucy Skillet Lasagna
- 1 lb ground beef
- 1 can (14 &1/2 oz) diced tomatoes - undrained
- 2 large eggs , lightly beaten
- 1 1/2 cup ricotta cheese
- 4 cup marinara sause
- 1 pkg(.9 oz) no - cook lasagna noodles
- 1 cup shredded part skim mozzarella cheese , optional
- In a skillet, cook beef over medium high heat until no longer pink.
- Breaking into crumbles , drain.Transfee to a bowl stir in tomatoes.
- In another bowl whisk eggs & ricotta.
- Return 1 cup meat mixture to skillet.
- Spread evenly.layer 1 cup ricotta cheese mixture.1 & 1/2 cups marinara & half of the noodles .
- Beaking noodled to fit as neccessary.
- Repeat layers top with remaining marinara sause.
- Bring to a boil.
- Reduce haat.
- Simmer covered .
- 15-17 minutes or until noodles are tender remove from heat.if desired sprinkle with mozzarella cheese.
- Let stand 2 minutes or until melted.
