Caprese Pasta

  1. Heat oil in a skillet and cook onion and garlic for 2-3 minutes.
  2. Add tomatoes, salt and pepper and simmer on low for 25 minutes.
  3. Meanwhile, boil water and cook pasta according to package directions, about 5 minutes.
  4. Drain well.
  5. Add butter and 1/2 of the basil to the sauce.
  6. Put pasta into a deep, flat pasta bowl and toss with the sauce.
  7. Garnish with the remaining basil and mozzarella.
