Caprese Pasta
- 3 Tablespoons Extra Virgin Olive Oil
- 1/4 cups Chopped Onion
- 2 cloves Minced Garlic
- 28 ounces, weight Can Of Peeled Italian Tomatoes
- Salt And Pepper
- 1 pound Angel Hair Pasta
- 2 Tablespoons Butter
- 1 bunch Fresh Basil, Divided
- Mozzarella (I Prefer The Mozzarella Balls), To Serve
- Heat oil in a skillet and cook onion and garlic for 2-3 minutes.
- Add tomatoes, salt and pepper and simmer on low for 25 minutes.
- Meanwhile, boil water and cook pasta according to package directions, about 5 minutes.
- Drain well.
- Add butter and 1/2 of the basil to the sauce.
- Put pasta into a deep, flat pasta bowl and toss with the sauce.
- Garnish with the remaining basil and mozzarella.
