Applesauce Oatmeal Raisin Cake Recipe

  1. Bring the water to a boil in a medium-size saucepan over moderately-high heat.
  2. Stir in the oats.
  3. When the liquid returns to a boil, stir in the raisins and salt.
  4. Reduce the heat and simmer 4 to 5 min, stirring occasionally, till the oats are soft and the water is absorbed.
  5. Remove from heat, stir in the sugar, applesauce, and oil.
  6. Cold to lukewarm.
  7. Meanwhile, heat the oven to 350 degrees, and grease a 13- by 9-inch baking pan.
  8. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl.
  9. Stir to mix well.
  10. Stir the Large eggs into the oat mix.
  11. Add in the flour mix, and stir just till moistened.
  12. Spread in the prepared pan and bake 30 to 40 min, or possibly till the cake starts to shrink from the sides of the pan and a wooden pick inserted in the center of the cake comes out clean.
  13. Place the pan on a wire rack to cold.
  14. The cake is good served hot.
  15. Or possibly cold completely, cover tightly, and store overnight at room temperature before serving or possibly freezing.
  16. This recipe yields 12 servings.
