Aunt Dora'S Beef Stew
- 1 1/2 to 2 lb. lean beef cubes
- 4 to 5 potatoes, quartered
- 4 medium onions, quartered or 6 to 7 small white onions
- 1 bunch fresh carrots, cut up in pieces
- 1 pkg. frozen peas, separated
- 1 (8 oz.) can tomato sauce
- 1 (10 oz.) can tomato juice
- 4 to 5 tsp. minute tapioca
- dash of lemon juice
- dash of Worcestershire sauce
- 2 to 3 bay leaves
- 3 to 4 whole cloves
- fresh ground pepper
- dash of salt (optional)
- Stagger all of the ingredients into a large, covered, casserole.
- Cover and bake in a slow oven at 225u0b0 to 250u0b0 for about 6 to 7 hours (test meat and vegetables for doneness).
- Stir once after cooking 3 to 4 hours.
- Makes 6 servings.
