Chips Ahoy Cherry Tarts

  1. Lightly grease 12 shallow patty pans with spray oil.
  2. Place the cookies over the moulds and bake for 5 minutes at 180C, or until cookies are soft.
  3. Gently press the cookies into the moulds whilst still soft.
  4. Whip the cream and icing sugar until thick.
  5. Spoon onto cooled cookies and top with cherries.
