Spicy Sausage Stir Fry with Plum Sauce, GF, O+
- 1 packages Jeanie O Spicy Turkry Sausage Links
- 1 tbsp sesame oil
- 2 Red Bell Peppers, sliced
- 1/2 small red onion sliced
- 2 cup broccoli florets (optional)
- 2 tbsp sesame oil
- 1/2 cup chicken broth
- 1/2 cup soy sauce
- 4 tbsp plum jam or preserves
- 4 tbsp rice flour
- 1/2 tbsp shredded ginger (powdered will do also)
- 1 tbsp chopped italian parsley
- 1/4 cup sliced green onion or scallions
- 1 clove garlic, minced
- mix all plum sauce ingredients until well incorporated, set aside
- cook sausage whole until browned, about 10-12 minutes
- slice sausage into medallions, set aside, reserve juices.
- dont worry if slightly undercooked
- on med high heat saute veg in sesame oil about 5 minutes
- add sliced sausage and juices back to veg and saute until sausage is cooked through
- add sauce mix to pan and bring to boil, stir frequently
- reduce heat to simmer until sauce thickens
- serve over warm Jasmine rice garnished with fresh sliced green onion or scallions
