1981 Winning Recipe Chili
- 2 1/2 pounds beef brisket 1 inch cubes
- 1 pound ground pork lean
- 1 large onions fine
- 2 tablespoons vegetable oil
- 6 cloves garlic minced
- 2 tablespoons green chili peppers diced
- 8 ounces tomato sauce
- 1 x salt and black pepper to taste
- 1 x beef bouillon cubes low sodium
- 12 ounces beer
- 1 1/4 cups water
- 6 tablespoons chili powder
- 2 1/2 tablespoons cumin ground
- 18 teaspoon dry mustard
- 18 teaspoon brown sugar
- 1 pinch oregano
- In a large kettle or Dutch oven, brown the beef, pork and onions in hot oil.
- Add salt and pepper to taste.
- Add remaining ingredients.
- Stir well.
- Cover and simmer 3 to 4 hours, until meat is tender and Chili is thick and bubbly.
- Stir occasionally.
