Layered Bean Dip
- 1 (16 oz.) can fat-free refried beans
- 1 (4 oz.) can chopped green chilies, drained
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 2 ripe avocados, peeled and pitted
- 2 Tbsp. lemon juice
- 1 (16 oz.) jar thick and chunky salsa, drained and divided
- 1 c. light sour cream
- 1 c. lettuce, shredded
- 1 c. light Cheddar cheese
- 1/2 c. black olive slices
- tortilla chips
- In medium bowl, mix refried beans, green chilies and taco seasoning mix.
- Spread on a 12-inch platter.
- Blend ripe avocados, lemon juice and 1/2 cup salsa until smooth.
- Spread on top of bean mixture.
- Spread sour cream on top of avocado mixture.
- Top with lettuce, cheese, remaining salsa*
- and olive slices.
- Serve with tortilla chips.
- May be refrigerated up to 24 hours.
- Makes 30 appetizers.
