Cranberry Spinach Blue Cheese Puffs

  1. Heat oven to 400 degrees F.
  2. Place 1 sheet thawed puff pastry onto cutting board.
  3. Cut into 16 rounds with 2-inch round cookie cutter.
  4. Place 1 inch apart onto ungreased baking sheets.
  5. Refrigerate 15 minutes until firm.
  6. Cut halfway through chilled pastry rounds, using 1-inch round cookie cutter.
  7. Refrigerate 15 minutes until firm.
  8. Repeat with second thawed pastry sheet.
  9. Bake pastry rounds 8-10 minutes or until puffed and golden.
  10. Cool 10 minutes.
  11. Remove middle pre-cut top and half of soft center with tip of sharp knife.
  12. Melt butter in 10-inch nonstick skillet over medium heat.
  13. Add onions; continue cooking 2-4 minutes or until crisply tender.
  14. Add spinach and dried cranberries.
  15. Continue cooking 45-60 seconds or until spinach is wilted.
  16. Remove from heat.
  17. Place about 1 teaspoon spinach mixture into each pastry cup.
  18. Top with blue cheese.
  19. Continue baking 5 minutes or until cheese is softened.
  20. Serve warm.
