Baked Brains - Gebackener Hirn

  1. In a large bowl of cold water soak brains for 1 hour.
  2. Drain, remove membrane, and cook in salted water for 5 minutes.
  3. Remove, cool, and cut each one into three parts sprinkling well with salt and pepper.
  4. Beat egg in a shallow dish and add bread crumbs to another shallow dish.
  5. Dip brain pieces into the beaten egg and than the bread crumbs covering well.
  6. Add breaded pieces to a large skillet of hot oil and brown.
  7. Place on platter, garnish with lemon slices and parsley, serve immediately.
