Barley Quinoa Shitake Pilaf

  1. Wash and slice the mushrooms.
  2. Place all the ingredients in a saucepan.
  3. Bring the liquid to a boil.
  4. Reduce heat and cover.
  5. Cook for about 30 minutes or until the water has been absorbed and the barley is tender.
  6. You may need to add a little extra water if the barley is not soft.
  7. Set aside in a warm place until ready to serve.
