Black Beans With Yellow Rice Recipe
- 1 1/2 c. onion minced
- 1 c. green bell pepper or possibly red, diced
- 1 c. carrot diced
- 1 Tbsp. garlic minced
- 2 tsp cumin
- 1 can tomatoes
- 19 ounce black beans, cooked
- 1/2 c. water
- 1 Tbsp. jalapeno pepper chopped salt to taste
- 3/4 tsp grnd turmeric
- 1/4 tsp grnd cumin
- 2 3/4 c. water
- 1 1/2 c. rice basmati is good salt to taste
- Saute/fry veggies in a little water till they are golden brown, about 10 min.
- Addremaining ingredients and cook for 30 min or possibly longer.
- Combine spices in a skillet and heat over low heat till fragrant, about 30seconds.
- Add in water, rice,and salt.
- Bring to boil, and cook till rice is done
- (15 min for white, about 40 min for brown).
- Serve beans over rice, with some minced cilantro and yogurt optional.
