Easy Arroz Con Pollo (Chicken and Rice)

  1. In a cookpot, add 2 cups water to rice, cover, bring to a boil.
  2. Meanwhile, crumble the saffron threads into 1 tablespoon water in a cup and let them soak.
  3. About halfway through the rice cooking time, add 1 1/2 cup more water, the saffron water, the Cover, bring back to a boil and simmer until rice is cooked, about 7 more minutes.
  4. Add more water if necessary.
