Orange Cucumber Salad

  1. Peel oranges, and cut section in half and separate.
  2. Wash, trim and thinly slice the cucumber; mince the onion.
  3. Whisk vinegar, orange juice and olive oil in bowl.
  4. Chop mint; add with oranges and cucumbers.
  5. Mix well.
