Basic Cocoa Muffins
- 50 grams Butter
- 45 grams Sugar
- 1 Egg
- 80 grams Cake flour
- 15 grams Cocoa (Van Houten pure cocoa)
- 1 tsp Baking powder
- 1 tbsp Milk
- 1 Vanilla extract (optional)
- Mix the room temperature butter and sugar together with a whisk.
- It will have a cream-like consistency.
- Add the beaten egg in three batches and mix well.
- Add milk.
- If you are adding vanilla extract, do so here.
- Combine and sift the ingredients marked .
- Add to the bowl from Step 2.
- Mix well with a rubber spatula and pour the batter into muffin cups.
- Smooth out the surface with a spoon.
- Bake for 15-20 minutes in an oven preheated to 180C.
- When a skewer poked through the middle comes out clean, they're done.
