chicken chili
- 3 boneless, skinless, chicken thighs cut into small bite sized pieces
- 1 onion, diced
- 3 clove minced garlic
- 2 tbsp chili powder
- 4 tsp cumin powder
- 1 can of chopped green chilis
- 3 chopped chilis in adobo sauce (canned)
- 2 tbsp fresh chopped cilantro
- 6 cup chicken stock
- 2 can navy beans
- Saute chicken, garlic, and onions in a little bit of olive oil.
- While cooking, add your chili powder, cumin powder.
- Add the chopped green chilis, and chopped chilis in adobo sauce, give it a few stirs.
- Add the chicken stock and beans.
- Bring to a boil and turn down.
- Simmer for a couple hours.
- In the last 30 minutes, add your cilantro.
- Serve with some shredded cheese and a dollop of sour cream on top, if desired.
- Enjoy!
