Adrak (Ginger Stock)

  1. Put grated ginger and stock into a pot and bring to a boil.
  2. Simmer 30 minutes uncovered until the water has reduced by half.
  3. Add the salt, cumin and pepper.
  4. Simmer for another 2 minutes.
  5. Squeeze in lemon juice and garnish with coriander.
  6. Excellent as a cold remedy and as a starter to an Indian meal.
