Shortcut Risotto Verde
- 1 cup long-grain white rice (uncooked)
- 1 can Campbell's Chicken Broth (10 1/2 oz)
- 2 cup Spinach (fresh, chopped)
- 1/2 cup Green Onions (chopped)
- 1/4 cup Celery (chopped)
- 1 tbsp Butter (or Margarine)
- 3 tbsp Parmesan Cheese (grated)
- 1 can Water (use soup can)
- Melt butter in a 2 quart saucepan over medium-high heat.
- Add rice, green onions, and celery.
- Stirring constantly, cook until rice is browned and vegetables are tender (about 5 minutes).
- Slowly stir in broth, water, and spinach.
- Heat to boiling, reduce heat to low, and cover.
- Cook for 20 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and stir in parmesan cheese.
- Serve hot.
