Basic Burdock Kinpira Stir-fry
- 1 Burdock
- 1/2 medium Carrot
- 1 Red chili pepper, sliced
- 3 tbsp Soy sauce
- 2 tbsp Sake
- 3 tbsp Mirin
- 2 tsp Sugar
- 2 tsp Dashi stock granules
- 100 ml Water
- 1/2 tbsp White sesame seeds
- 1 Sesame oil
- Scrub the burdock to get rid of the dirt and then cut into 4-5 cm pieces.
- Cut those pieces into strips (the size of a matchstick) and soak in water.
- Peel the carrot and cut in the same manner as the burdock.
- Thinly slice the chili pepper.
- Put oil into a heated frying pan and cook the chili pepper.
- Add the drained burdock and the carrot, and saute.
- Once the vegetables have become tender, add the ingredients.
- Turn down the heat to low and simmer until the liquid evaporates.
- Lastly, add the white sesame seeds.
