Mini New Potato Bites

  1. Place potatoes in large saucepan; add enough water to completely cover potatoes.
  2. Bring to boil.
  3. Reduce heat to medium-low; cook 15 min.
  4. or until potatoes are tender.
  5. Meanwhile, mix cream cheese, sour cream and Parmesan cheese; cover.
  6. Refrigerate until ready to use.
  7. Drain potatoes.
  8. Cool slightly.
  9. Cut potatoes in half; cut small piece from bottom of each potato half so potato lies flat.
  10. Place on serving platter.
  11. Top each potato half with 1 tsp.
  12. of the cream cheese mixture.
  13. Sprinkle evenly with bacon and chives.
