Poor Knights of Windsor

  1. Cut the crusts off the bread.
  2. Reserve a tablespoon of butter from the butter in the recipe ingredients.
  3. Use the rest to butter the slices of bread.
  4. Spread the jam/preserves onto three slices, then put the other slices on top of them to make three sandwiches.
  5. Stack the sandwiches and cut through them all to make each one into three long fingers
  6. Beat together the egg, milk and vanilla in a shallow bowl.
  7. Melt the oil with the reserved butter in a saute pan (the oil is to stop the butter catching or burning)
  8. Dip the fingers in the egg mix then add to the pan (in batches depending on the size of your pan) Fry each side for about 2 minutes until golden brown.
  9. Drain on kitchen paper, then serve, sprinkled with sugar.
