Poor Knights of Windsor
- 6 slice white bread, day old bread is fine
- 1 egg
- 1/4 cup milk
- 1/2 tsp vanilla extract (optional)
- 1/3 cup butter, room temperature
- 3 tbsp strawberry jam (preserves)
- 2 tbsp white sugar
- 1/2 tbsp vegetable oil
- Cut the crusts off the bread.
- Reserve a tablespoon of butter from the butter in the recipe ingredients.
- Use the rest to butter the slices of bread.
- Spread the jam/preserves onto three slices, then put the other slices on top of them to make three sandwiches.
- Stack the sandwiches and cut through them all to make each one into three long fingers
- Beat together the egg, milk and vanilla in a shallow bowl.
- Melt the oil with the reserved butter in a saute pan (the oil is to stop the butter catching or burning)
- Dip the fingers in the egg mix then add to the pan (in batches depending on the size of your pan) Fry each side for about 2 minutes until golden brown.
- Drain on kitchen paper, then serve, sprinkled with sugar.
