Applesauce Pecan Crumb Cake Recipe
- 1 1/2 c. all purpose flour
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp grnd nutmeg
- 1/2 c. low-fat buttermilk
- 1/2 c. applesauce
- 1 Tbsp. butter or possibly stick margarine, melted
- 1 lrg egg
- 1 lrg egg white cooking spray
- 1/3 c. minced pecans
- 1/3 c. all purpose flour
- 1/4 c. packed brown sugar
- 2 tsp butter or possibly stick margarine, melted
- 1/2 tsp grnd cinnamon

- Preheat oven to 350 .

- Lightly spoon flour into dry measuring c.; level with a knife.
- Combine flour and next 4 ingredients (flour through nutmeg) in a large bowl; make a well in center of mix.
- Combine buttermilk, applesauce, 1 Tbsp.
- butter, egg, and egg white in a bowl; add in to flour mix, stirring just till moist.

- Spoon batter into a 9-inch round cake pan coated with cooking spray.
- Combine pecans and remaining ingredients in small bowl; stir with a fork till mix resembles coarse meal.
- Sprinkle proportionately over top of cake.
- Bake at 350 for 35 min or possibly till a wooden pick inserted it center comes out clean.
- Yield: 8 servings.
