Pickled Jalapeno Peppers
- 1 lb chili pepper, quartered
- 1 lb carrot, sliced
- 1 garlic clove, chopped
- 18 cup salt
- 18 cup pepper
- 18 cup white pepper (optional)
- 2 cups white vinegar
- Bring the white vinegar to a boil in a small pot.
- Add the sliced carrots, boil 10 minutes.
- Add remaining ingredients.
- Simmer 10 minutes.
- Remove from heat.
- Pour Contents into a jar, screw on jar lid, and let cool.
- Refrigerate.
