Baked Mediterranean Chicken
- 4 boneless skinless chicken breasts
- 9 ounces cherry tomatoes
- 4 tablespoons capers
- 4 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 12 black olives, pitted
- salt and black pepper
- Heat the oven to 375F.
- Place the chicken and tomatoes in a roasting tin.
- Season wih plenty of black pepper, scatter over the capers, then add the olive oil and balsamic vinegar.
- Place in the oven and cook for 20 mins, then add the olives and cook for a further 5 mins or until the chicken is cooked through.
- Remove from the oven and serve on four warmed plates.
