Shrimp Quesadilla

  1. In large bowl add butter, lime juice, shrimp, 1/2 Tablespoon of cilantro and stir until everything is coated.
  2. Place in the refrigerator and allow shrimp to marinate while you do the next steps.
  3. Heat a medium sauce pan over medium heat and add olive oil to the pan.
  4. Add the onions, pepper and seasonings to the oil and cook until onions are tender.
  5. Once they are done remove them to a small bowl and place in either a microwave or oven to keep warm.
  6. Add the shrimp to the sauce pan and cook 2-3 minutes on each side or until shrimp are a nice pink color.
  7. Remove shrimp and combine them with the onions and add a couple of dashes of sea salt.
  8. Lower the heat on the sauce pan to a low heat and wipe down very carefully with paper towels.
  9. Place one tortilla on a flat surface and add a little bit of cheese and then top with onions, shrimp, cilantro and avocado.
  10. Place the tortilla on the sauce pan and let it sit for about 45 seconds to 1 minute and then top with cheese and place another tortilla on top and flip.
  11. (Be careful when flipping although its OK if some stuff comes out).
  12. Cook for another minute and remove from your pan and do the same with the rest of the tortillas and stuffing.
