Egg Masala
- 3 each hard boiled eggs
- 2 medium chopped onion
- 1 cup fresh coconut milk
- 2 green chillies
- 1 clove
- 1 small piece of cinnamon
- 1 caradamom
- 1 star anise
- 1 small tomato (optional)
- 1 pinch turmeric powder
- 1 tsp garam masala powder
- 1 tsp coriander powder
- 2 tsp oil
- 1 salt
- 1/4 bunch chopped coriander leaves
- Heat oil in a pan and add cinnamon, cardamom and cloves and saute.
- Add chopped onions, green chillies and saute until it becomes soft.
- If adding tomatoes, add now and saute a little
- Now add all the powder varieties, salt, mix well and add coconut milk and reduce the flame
- Once the mixture starts boiling, de-shell the boiled eggs and give a cut mark in verticals and add to it.
- Just flip the gravy in between occasionally and once it starts thickening switch off the flame.
- Garnish with chopped coriander leaves.
- Can be taken with Chappatis, naan, dosa, aapam and rice.
- Note: If you want very mild flavours, then can skip adding garam masala and can add red chilli powder.
- * Don't overmix after adding eggs, or else the eggs will break out.
