Stacy'S Marinated Potato Salad

  1. Leave skin on potatoes when boiling.
  2. Put in large bowl when boiled and after drained.
  3. Make the following to pour over while potatoes are still warm:
  4. Italian salad dressing, sliced green onions and chopped parsley.
  5. Pour over the warm bite-size potatoes and let set for about 1 hour to marinate.
  6. Toss several times. Then add the mayonnaise.
  7. Toss until completely covered.
  8. Put in fridge for at least 2 hours.
  9. Better to chill overnight so flavors have plenty of time to blend.
  10. Just before serving, garnish with sliced hard-boiled eggs.
  11. Great!
