Stacy'S Marinated Potato Salad
- 3 lb. cooked potatoes, quartered (use "red" potatoes)
- 1/2 c. Italian salad dressing (the bottled type)
- 1/2 c. sliced green onions
- 1/4 c. chopped parsley
- 1 c. mayonnaise *
- sliced hard-boiled eggs
- Leave skin on potatoes when boiling.
- Put in large bowl when boiled and after drained.
- Make the following to pour over while potatoes are still warm:
- Italian salad dressing, sliced green onions and chopped parsley.
- Pour over the warm bite-size potatoes and let set for about 1 hour to marinate.
- Toss several times. Then add the mayonnaise.
- Toss until completely covered.
- Put in fridge for at least 2 hours.
- Better to chill overnight so flavors have plenty of time to blend.
- Just before serving, garnish with sliced hard-boiled eggs.
